Ube Pancakes
Ube extract was so hard to find in my area for a while. Everytime I found it at a store, I would buy a couple bottles to have on hand when I made desserts at home. It has a nice nutty vanilla taste to it, a wonderful flavor for just about any sweets. It was especially good used in pancakes. These are definitely a favorite for breakfast in our household!
Ingredients
- 1 1/2 cups All-purpose flour
- 3 1/2 tsp Baking powder
- 1 tsp Salt
- 1 tbsp Sugar
- 1 1/4 cups Milk
- 1 Egg
- 3 tbsp Melted butter
- 2 tsp Ube extract
Instructions
- Mix all ingredients together in a bowl until well incorporated.
- Heat lightly oiled pan or griddle to medium high heat, then pour in about 1/4 cup of batter. Cook for about 1 to 1 and 1/2 minutes one first side or until golden, then flip and brown other side (approximately 1 minute).
- Serve warm. You can put some butter or whipped cream on top for extra deliciousness. Enjoy!
